The wine program at CRU is quite simply an expression of the wines that we love, respect or think need to be represented on a comprehensive wine list. The collection of more than 150,000 bottles is drawn from the private collection of the owner Roy Welland with a significant emphasis on his favorite region, Burgundy.
Robert Bohr, the wine director, organizes the wine list geographically with Burgundy taking much of the spotlight. They account for more than half of the 4200 selections with reds from the Rhone Valley, Piedmont and whites from Austria and Germany following in importance. In each country, we look to the definitive producers of the area and try to create extensive verticals which allow us to evaluate their wines over time. We look for wines that are nuanced, elegant and typical of their region; thankfully, these are wines which match very well with our food. Regardless of origin, the wines we seem to prefer have some bottle age; consequently, we have a program where we cellar wine until we believe it is ready to be served.
We strive for a high level of careful and thoughtful wine service. Every detail has been considered, from the temperature of the wines served by the glass to the quality of the stemware and the wine team diligently examines and tastes each wine before it is served. We believe, irrespective of the costs to our restaurant, that every wine must pass our standards first and so far we are pleased with the service if not the high number of bottles we reject.
Despite the size of the wine list and the depth of the cellar, we cannot represent every great winery never mind every superlative wine that you might be looking to experience but we are interested in your thoughts. Wine is a fascinating subject because it elicits great passion from people with diverse experiences. We have chosen these wines carefully based on our preferences in the hope that our guests will enjoy our perspective and we look forward to the interest, conversations and maybe even the debate that it generates.
